The Cod


John Mark Nanit – chef of Vetri Restaurant was appointed Junior Ambassador of Norwegian cod in Italy in 2018 – offers a creative and innovative journey into the taste and texture of the main ingredient of the second themed dinner in Punta Conterie: the salted codfish. The event is part of the 10th Festival Triveneto del Baccalà, a travelling competition around the most important restaurants in the Tre Venezie to look for the best cod recipe. On 14th November John Mark Nanit of Vetri Restaurant will prepare three different recipes: fish ball with soft heart of cod and ramsons mayonnaise (his award-winning recipe); cod ravioli and pea cream; cod with caramelized Tropea onion, soy sauce, butter and tapioca, each with a matching wine.
